CAS Fresh® is a preservation technology for cells and tissues. By combining cold technologies (blast-freezing or cryogenic liquids), magnetic fields and other proprietary techniques, CAS allows for the preservation of organic matters, such as food, in a state akin to that of a fresh material.
For food products this means preserving perfectly the organoleptic properties of a product (taste, smell, texture…), as well as its nutritional qualities.
As the product is thawed and brought back to room temperature, the integrity of the cellular membrane keeps the flavorants and nutrients inside the cell and the tissue. There is no drip loss or alteration of taste. The product can be processed, cooked or eaten exactly like a fresh product.
CAS Fresh® works for a wide range of food products, from raw foodstuff to fully cooked dishes and without any additive, preservatives, texturing or maturing agents.
CAS ushers in a revolution in the Food industry. Sea freight can replace air freight for fresh products, stocks of perishable seasonal products can be built and processed throughout the year, and food can be processed, cooked, stored and served like fresh without any need for additives or preservatives.
CAS Fresh® can play a major role in handling the numerous challenges the current model of Food industry is facing. The technology can reduce the carbon footprint of the food chain by replacing air freight with sea freight, by limiting the number of deliveries of fresh products; it reduces the waste of large quantities of highly perishable seasonal products to feed more people; by building buffer stocks CAS helps smoothing out the production peaks and volatile prices that prevents the sustainable management of food resources. The use of deep-freezing is also effective in limiting the growing presence of parasites (anisakis…), and bacteria that proliferate in the harvesting, transporting and distribution of fresh foods.
Preservatives, texturing, maturing, additives and other chemical agents become redundant in a process that brings a perfectly ripe, nutritious, safe and fresh product to the consumer with reduced waste.
